Everything looks right. I have the same setup (Mac w/MCX). Recordings in Serato are dependent only on channel faders and the crossfader (if active). Master level volume has no impact. I believe that you said you tried recording with another controller and you had no issues so it must be an issue with your MCX.
The only other outlier is the to make sure your MCX firmware is up to date (V 2.1).
